Barefoot Contessa's Chicken Stew

One of my very favorite things to do is peruse my cookbooks and cook something extra special. Ina is my favorite cook. Sticks of butter, fresh herbs, heavy whipping cream. Every recipe I have made of hers is worth it's weight in gold. Well, there was the time the bottom fell out of my Honey Vanilla Pound Cake right before company came, but I'm sure it was me and not her.

Here is what makes this Chicken Stew extra special. Fresh ingredients. Made from scratch goodness. This recipe will take some time to prepare. You can roast your chicken and prepare the dish in advance. That is what is wonderful about this dish. Great for company or those days when you have free time earlier in the day and you just want something you can pop into the oven. And it smells amazing baking away in the oven.

Next week I am going to teach you how to roast chicken. You are going to love it. The chicken always turns out perfect and flavorful. I don't think you'll ever boil chicken for a dish again. And roast chicken is so simple.

This is the dish going in for the first round to bake. Once you put it in you make your biscuits for the top.

Handmade biscuits are suprisingly simple as well. A few ingredients and you are off and running. These bisquits have fresh parsley in them.


Turn the dough out onto a well floured surface and roll. If you don't have a cookie cutter use a glass.

A few comments for you. First - that recipe? MMMMM...I can't wait to try it.

Second, on napping - I don't care if your kids nap until they're 15, I think you will always go through a mourning period. Sloan gave them up around 4.5. He does rest - he's required to stay in his room and play quietly for 1 hour each day. He generally comes out 3-4 times for little things like potty breaks, a drink or help with a particularly trickey LEGO ship. :) Tia is just four and is showing signs that she's ready to cut back on naps - but she's not ready to give them up completely. She still takes a nap most days but it's significantly shorter than it used to be. :(

Third - good for you for your obedience on schooling. You know what's funny - we are doing the public school for that EXACT same reason. Part of me would really like to try homeschooling (neither one of us are particularly passionate about Christian schooling at this point though we are, of course, not opposed). But in my heart I truly feel like the Lord is blessing our choice to put our kids in the public school. For now that is the place that He has us. We're open to changing and I am shockingly open to homeschooling, but for now it's not where He has directed our paths. It's all about obedience isn't it?

Finally - I am thisclose to have my room remade and you are my inspiration. I just keep thiking, "What Would Anna Do?" I think I need to make bracelets. As soon as I earn the money (by selling almost everything we own of Craigs List) to purchase the last few items I will post pictures.
