I finally made it to a little thing we have in town called the grocery store. Made menus and everything. This is what we had tonight-roast. The best thing about Roast night is doing the gravy Luby's style (as my brother in law Chad calls it). You really need to try it next time you have brown gravy with mashed potatoes! Here's what I'm cookin' the next week or two:
- Roast, Mashed Potatoes, Corn, Salad
- Smothered Beef & Bean Enchiladas
- Chicken Fettucini Alfredo
- Grilled Cheese & Tomato Soup
- Veggie Lover's Baked Ziti
- Nacho Salad
- Baked Potato/Salad Night
- Chili Dogs
- Beer Battered Fish, Potatoes, Corn
- Chicken Pot Pie
- Homemade Pizzas
The doctor gave us a great report today. We are done with the high risk doctor and he said if I went into labor at any time now he would not try to stop it. The baby weighs around 6 lb 6 oz. That makes me so happy that the baby is a good size! It's getting exciting and I am also nervous about having a third baby!!! But mostly excited.

What recipe do you use for your beer-battered fish and how do you fry them? Making my own fish and chips is my biggest motivator for getting an immersion fryer.
well david, i am glad you asked. see, it went down like this. i thought i would give fish sticks a try. but, they looked really gross to me. then i noticed the box of beer battered fillets next to them. so, i'm betting i will preheat the oven to 400 something and bake them for around 30 minutes :). hahaaa! if you guys get an immersion fryer, we will come test your fish and chips because that sounds really good :)!
That was a hilarious response! At least you were honest!! Since, as of yesterday, I am no longer on "bedrest" I was actually able to go to the store today! It's amazing to remember life's little pleasures. :) Here's our list...
Grilled chicken/veggie pasta
Chicken Spaghetti
Eggplant Parmesan
Tortilla soup
Curry Chicken
Crockpot fajitas
Smothered Enchiladas (I just pulled that one back out and I'm excited!)
The backup meals are breakfast, tacos, and spaghetti and meatballs. Worst case senario...tuna helper! Scary thing is my kids actually like it!
What I don't understand is how the gene pool was so unevenly split between us. Your menu for the week, with a 6.6 lb. baby in tow no less, could rival some of Conway's local menus! As I read team Larsen's comment I came to the scary realization that her "back-up menu" contains the meals that I classify as true gourmet at my house. My back-up meals are Ramen noodles, peanut butter and jelly sandwiches, and SPAM ! Where did I go so wrong?........

I don't have a menu for you, though. My meals consist of whatever is at Brough (the cafeteria) or microwaveable easy mac.

We'll have Ribs cooked in a crockpot tomorrow (got the recipe from a girl's blog whose cooking in her crockpot all year)

Grilled Chicken with Alfredo/ The boys and I actually eat a velveeta sauce while Cam has Alfredo:)
Cube Steaks and potatoes
It was fun to see what others have posted... I run out of ideas to cook ALL of the time!!
Cube steaks are with the beef/meat section. We put some flour on them and then fry them in some oil and then I usually make some gravy for them. They're really good:) Sometimes I cut the steaks in strips and serve them that way so we don't have to cut them into pieces for the boys.
yea, it's kind of like chicken fried steak... mmmmm.. have you ever made that? I'm soooo hungry right now. Cam is making good burgers but now I'm in the mood for chicken fried steak, mashed potatoes and rolls:) maybe I can make some of that for a second dinner! I mean, how am I going to top my 3.5 pounds in less than two weeks if I don't eat, eat, eat:)
Yum-O! Thought I'd share for your friend wanting to do fish and chips...we use the Louisiana fish fry packages (near the cornmeal and flour) to fry our fish. They have several different flavors/seasonings. There are also some hush puppy mixes there that are great. Coat the fish in mustard first...trust me, it's great! Just drink the beer...no use wasting it on the fish!

Salmon, couscous, black beans,
& tomato/cilantro relish
Roast with veggies and potatoes
Steak and veggie kabobs
Tim's pizza with a super salad (hopefully)!
Cook? Are you kidding? I just texted Dave and told him to come home to fix me dinner. Baby's hungry!!!!
